Uncle Bob's Cabbage & Rice
An ode to stuffed cabbage, but without all the stuffing and rolling part! This simple recipe can be whipped up within 45 minutes and serves about 6-8 people.
1 Half Head of Cabbage, chopped (I like to use a mixture of both red and green cabbage)
1 20oz Can of Diced Tomatoes with Juice
1 lb Ground Beef
1 Cup Water
Salt and Pepper to Taste
Serve with Cooked rice
In large skillet or dutch oven, brown ground beef. Add chopped cabbage and diced tomatoes with juice to skillet. Add cup of water to mixture and let boil. Once boiling, place lid on skillet and let simmer for about 15 minutes until cabbage is fork tender. Serve over cooked rice.
