Creamy Garlic Zucchini Soup
I have never been a fan of zucchini, unless it is in some sort of cake or bread, and a bunch of sugar! But the bag of zucchini staring at me in the fridge, because I was on a health kick that week, was begging me to cook something better with it! A little pinterest surfing had me thinking of ways I could try these little guys, without forcing myself to eat another slimy sauted zucchini slice. I found a recipe I figured I could try and tweak to my liking, plus my head was spinning on other ways I could use this soup, like steak sauce!! Oh yes, day three of this being in my fridge, I cooked up some elk steaks and drizzled a nice helping of this over the top, AMAZING. I was official sold on Creamy Zucchini Soup.
Ingredients:
1/4 tsp Onion Powder
4 Cloves Garlic
3-4 medium Zucchini, skin on, cut in large chunks
4 cups Chicken Broth
Salt and Pepper to taste
Dollop of Sour Cream for serving
Tablespoon of diced Bacon or Ham for Serving (optional)
In large pot, bring Chicken broth to a boil, adding in zucchini chunks, garlic cloves, and onion powder. When zucchini has been cooked through, fork tender, transfer to blender for pureeing OR I use a hand held immersion blender right in the pot. Blend until smooth. Transfer back into pot for simmering. Add salt and pepper to taste. I like my pepper on the heavier side for a nice kick. Serve in bowls with dollop of sour cream and bacon/ham.
For steak sauce, I simply heated up 1/2 cup of soup and drizzled over my already cooked steaks.

** I also think this would be excellent served with cooked gnocchi and garnished with bacon bits! Haven't had a chance to try it yet though ;)
