Soft Molasses Cookies

The perfect little molasses sugar cookie to pair with your morning coffee. The smells of spices in your house are intoxicating as they bake, putting you in a holiday state of mind!

 

1 Cup Softened Butter

1 1/2 Cups Sugar

1/2 Cup Molasses

2 Eggs

4 Cups Flour

1/2 Teaspoon Salt

2 1/4 Teaspoon Baking Soda

2 1/4 Teaspoon Ground Ginger

1 1/2 Teaspoon Ground Clove

1 1/2 Teaspoon Ground Cinnamon

Extra Granulated Sugar for Sprinkling

 

1. Preheat Oven to 350º

2. In mixing bowl, cream together butter and sugar until light and fluffy. Beat in eggs and molasses. Set mixture aside.

3. In another bowl, combine flour, salt, baking soda, and spices, mixing well. 

4. Gradually mix flour mixture into creamed ingredients until dough is blended and smooth.

5. Roll dough into 1 inch balls. Dropping them into extra granulated sugar. Coat thoroughly and place on greased cookie sheet 2 inches apart. Bake for 10-11 minutes. 

Yields about 4 dozen
