Cinnamon Roll Cupcakes

My Daughter asked for cinnamon rolls as her special treat to bring to her class for her birthday. She didn’t want cupcakes or cookies or something EASY… but I made it work and I think it is quite genius! I need to upgrade my cupcake liner game and try more things in these babies!!

Simply take your favorite cinnamon roll recipe, of course I used my favorite one here. The nice thing about this particular recipe is that it isn’t a huge batch, plus you can really watch how big the cupcakes are rising so they don’t over flow the cupcake liners! Roll out cinnamon rolls according to recipe and instead of lining them in a baking pan, pop them in a cupcake baking sheet with liners. Easy Peasy! For my recipe, I let them rise in a preheated oven. Once they have filled the liners, I set the oven to bake. They will rise a touch more while baking so do not let them over rise on the first initial rise in the preheated oven. Bake accordingly, you may need to adjust and lower the time cook time. Watch for golden brown tops and Voila! I skipped the caramel icing and left them plain to avoid extra messes at school, but you could easily drizzle icing all over the tops of these babies.
