Honey & Lime Shrimp Tacos
Shrimp tacos
Marinade:
1 lb shelled and deveined shrimp
1/2 cup olive oil
4 cloves garlic, minced
3 tablespoons Yirsa Farms Honey
2-3 tablespoons lime juice
1/4 tsp sea salt
3 dashes cayenne pepper
Slaw:
1/4 head of red cabbage, thinly sliced
1/4 head of green cabbage, thinly sliced
1/3 cup lime juice
3 tablespoons Mayonnaise
1/2 cup light, neutral oil
1 tsp sugar
1/4 tsp sea salt
3 dashes chipotle pepper
Rinse the shrimp with cold water. Drained and set aside.
Mix olive oil, garlic, honey, lime juice, salt and cayenne in ziplock bag. Add shrimp to bag, remove excess air and seal. Let marinate for at least 30 minutes or up to 12 hours. Grill shrimp on skewers until bright or opaque, about 2 minutes per side. Alternatively, you can saute on stovetop in remaining marinade. Set cooked shrimp aside.
Thinly slice red cabbage. In bowl, whisk together oil, mayo, lime juice, sugar, salt and pepper. Toss in cabbage and mix with lime vinaigrette. This can be prepared ahead of time by a couple hours.
Serve on flour or corn tortillas, with cabbage slaw, shrimp. Great with avocados, black beans and sour cream.
