Raw Apple Cake

4 cups peeled, cubed Apples

2 Eggs

1/2 cup melted Butter

2 cups Sugar

1 tsp. Cinnamon

1/2 tsp. Baking Soda

2 cups Flour

1 1/2 cup Raisins

1 cup Walnuts

 

1. Preheat oven to 375º F.

2. Break eggs over apples and stir, coating apples well.

3. Stir remaining ingredients into apple/egg mixture. Place in a greased 9x13" cake pan. Bake for 45 minutes or until golden on top with a toothpick inserted cleanly. This pairs deliciously with the caramel frosting below! Or it is excellent served by itself. 

 

Caramel Frosting :

1/2 cup Butter

1 cup Brown Sugar

1/4 cup Milk

2 cups Powdered Sugar

Melt butter and brown sugar together on low heat. Bring to boil and boil for 2 minutes, stirring constantly. Add milk and heat just until boiling again. Remove from heat and cool slightly. Whisk in powdered sugar until smooth. Pour icing over cake. It will quickly start to set up.
